White Chocolate Macadamia Nut cookies

Well, my new title bar called for some form of repayment for Nail. He suggested his favourite cookie... and I complied. Apparently this is a very good recipe, though I've not tried it.

Dry
2 1/4 cups all-purpose flour
1 teaspoon baking soda

Wet
1 cup butter, softened
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract

Goodies
1 (12-ounce) package or 2 cups white chocolate chips
1 to 2 cups macadamia nuts, coarsely chopped
  1. Preheat oven to 350*F
  2. In a medium bowl, mix together the dry and set aside.

  3. In large mixing bowl, with an electric mixer at medium speed, cream together the butter and both sugars until light and fluffy. Beat in the egg and vanilla. Gently stir in flour mixture until just combined. Fold in the white chocolate and macadamia nuts.

  4. Drop cookies by rounded tablespoonfuls onto a non-stick cookie sheet (or lined with parchment paper) about 1-inch apart.

  5. Bake for 9 to 12 minutes or until lightly golden, turning cookie sheet around after 5 minutes to ensure even browning.

  6. Transfer cookies to a wire rack and cool completely.
The original recipe had called for some salt, which I left out due to the fact that I used salted butter and the nuts were roasted and salted. Apparently I can't get unsalted macadamia nuts until at least Christmas.

I did get to try out my new food processor, since I had to chop the nuts. I think I'll find some other way to crush the nuts next time.
