Say, "Cheese Sauce!"

I hate November. There is nothing redeeming about it other than the fact that it's only thirty days. The trees are showing their branches, the sky seems to be forever grey and the daylight is slipping away like a thief in the night. All in all, not much to recommend it.

In other news, I'm still cooking. Now that I've only one kitchen to stock, and one home to go to, things are much easier. Typically the Singer will cook on Mondays, while I'll get Tuesdays and Wednesdays due to her schedule. This evening, it was broiled steak, mashed potatoes, steamed cauliflower and broccoli served with a homemade cheese sauce.

Really a simple recipe which I found through the marvels of google.

Cheese Sauce
  • 2 tbsp melted butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 cup grated cheddar cheese (or more)
Melt butter, add flour and mix well. Add milk. Stir over medium heat until it boils and thickens. Add cheese and stir until melted and thick.Use as macaroni and cheese sauce or with vegetables (such as broccoli).

It worked really well, and had a nice flavour. I can only imagine how well it would work if I'd used an extra old cheddar. But then, I like my cheese old enough to vote. In fact, it's very similar to my gravy, which uses equal parts oil and flour as a base. In the end, I was thwarted by my stupidty; I forgot to take a picture.

I've got plenty of chances to make up for it though. Christmas will soon be upon us, and well, I've got a lot of baking ahead of me.

I make my cheese sauce with bacon and cut the butter.. the bacon fat acts as the butter would.. and hell who doesn't love bacon?
